Devils on Horseback

While pigs in blankets is the more well-known bacon-wrapped bite, I feel devils on horseback deserve to be more in the limelight. Using either prunes or dates, the dried fruit adds a subtle sweetness, which works wonderfully with the savoury bacon. Like pigs in blankets, devils on horseback are a great snack to be handed around at a drinks party or as a side to a festive roast.

Soaking the dried fruit in brandy is not necessary but adds a little extra depth.

Ingredients

6 rashers of streaky bacon

12 stoned prunes

brandy (optional)

Method

  1. Preheat the oven to 200ºC/400ºF. If using brandy, soak the prunes or dates in a large slug for 30 minutes to an hour before preparation.
  2. Cut the bacon in half to create 12 pieces of equal size. Wrap a one-half piece of bacon tightly around one of the dried fruits and use a toothpick to secure it.
  3. Bake in the oven for 20 minutes in a roasting tin or until nice and crispy. The bacon is fatty, so you don't need to use any cooking oil.
  4. Remove from the oven and leave to cool for a few minutes before serving.
